Wilson County Canning College

ISSUE
The Wilson County Canning College was created to share the knowldge of Home Food Preservation to consumers that reside or work in Wilson County.
 

GOAL
The goal of the class
is to update consumers on current USDA guidelines associated with preserving foods.  This class is currently taught for beginners only.  Typically, classes are taught in two sessions.  Session 1 focuses on fruit and using a water-bath canner and Session 2 focuses on vegetables and using a pressure-canner.

COST AND PRE-REGISTRATION
Each session is $25 and pre-registration is required.  Currently, Wilson Farmer's Co-op sponsors pre-registration.

INSTRUCTORS
Each course is taught by Shelly Barnes, FCS Extension Agent and Jenny Jackson, Wilson Farmer's Co-op.

INFORMATION ON CLASSES
If you are interested in attending one or more classes, please contact Shelly Barnes at 444-9584 or sbarnes@utk.edu to find out when the next class is scheduled.  Typically, classes are in the Spring and Summer of the year.  Freezing classes may be offered in the Fall and Winter, depending on the schedule of the Agent.

OBJECTIVES
The objectives of the Canning Classes to:

  • Learn the basics of home preservation, 
  • Increase awareness of proper canning practices,
  • Increase access to research-based Home Preservation resources, 
  • Utilize the University of Tennessee's resources to facilitate the improvement of Home Preservation, and
  • Share results of Home Preservation efforts with the University of Tennessee.
